The goal of the summer impact project CONNECT is to support GMU undergraduate students to develop and implement a series of nutrition education tools that will support behavior change in a diverse group of elementary-school-age children within the Fairfax area. The proposed project will immerse students in the development of nutrition education tools by blending provision of knowledge, guided practice and skill-building in a real-world setting. We have partnered with Mott Community Center, which is managed by Fairfax County Neighborhood and Community Services, to develop and provide enriching nutrition education learning experiences to elementary-school-aged children enrolled in the center’s summer programs. The program is primarily conducted in the Peterson teaching kitchen within the Department of Nutrition and Food Studies, with visits to local farms, apiaries, greenhouses, farmers’ markets, and food markets to identify a diverse range of nutrition education strategies and activities.
